Vinha Formal 2015 Sparkling

To highlight the character of the terroir, this wine comes from a vineyard called Formal. Located on a small slope facing east, in Óis do Bairro, it is at the heart of the map of Bairrada's white wines, as delimited by António Augusto Aguiar in 1866, in “Memória sobre os Processos de Vinificação”. In this vineyard, the first harvest for sparkling wine is made between mid and late August, to obtain high levels of acidity; the second harvest is made two weeks later, for the production of white wine.
