The grapes are harvested from old vineyards located in the municipality of Alijó. These vineyards are unique for their mixture of white and red grape varieties, although only the white ones are used in the winemaking process. The process begins with the grapes being lightly crushed without destemming, in a vertical press. The resulting must is then decanted in stainless steel tanks for 24 hours at a temperature of 10°C, before being transferred to used 225-litre French oak barrels.
Here, the wine ferments for 25 days at controlled temperatures between 14°C and 18°C. After fermentation, the wine is aged in the same barrels for approximately 12 months, without any battonage intervention, followed by an additional 2 years of maturation in the bottle.
The tasting notes reveal a light but surprisingly creamy wine, with a crisp texture and a tension that gives it an exceptional brightness. Delicate smoky notes from the barrel complement the explosion of citrus flavors that dominate the palate, accompanied by nuances of dried herbs and tea leaves, resulting in an intensely lemony profile.
It is recommended to serve between 10ºC and 12ºC, ideally with grilled fish and seafood dishes.
