Manual night harvest, followed by gentle crushing into vats by gravity (the grapes never touch pumps), with open spout (open valve). Then, natural cold settling, without any additives. Spontaneous fermentation in stainless steel vats or barrels. 55% sangria and 45% direct press. Bottled in April 2025. Bright salmon color. It has a creamy texture on the palate that is balanced with refreshing acidity.
