The Encruzado white wine is born at an altitude ranging from 400-600 meters, in soils of granitic origin with large rocky outcrops, influenced by the Dão and Mondego rivers.
The grapes, exclusively from the Encruzado variety, were harvested manually in the second week of September, into small 18kg boxes, according to a careful selection of the best grapes in the vineyard.
Vinification and aging: Manual harvest. Grapes from a single vineyard of the Encruzado variety, from Quinta do Ribeiro Santo. Total destemming and pressing. Selection of grape must, cooling, and low-temperature decantation for 24 hours. Fermentation in stainless steel tanks at around 15ºC for 20 days. 50% of the wine completes fermentation in new French oak barrels for 4 months.
