OS Paulistas

Hand-picked at night, selected on a sorting table, 30% whole bunches and 70% destemmed, falling by gravity into the vat. Spontaneous fermentation and maceration for 25 to 40 days, followed by 18 months of aging in French oak barrels over three years old. Ruby color with some violet touches, medium concentration. On the nose, lots of red forest fruit, some undergrowth. Fresh attack, good fruit with notes of pomegranate. Very fine, long and structured.
