Far from consensual, it resulted in everything it shouldn't have been, a rosé born from Solera, with technique and science set aside to allow us to be carried away by the whims of time that insists on escaping, the chance we try to avoid, and nature setting the tone for the whole ensemble, demonstrating who's in charge: Solera.
"Everyone leaves happy, memories are for those who stay behind."
The Varieties:
Touriga Nacional 55% and Aragonês 45%.
In the Vineyard:
Located in Lavre, with an average age of 13 years. The Mediterranean climate provides a wide range of temperatures, and the transitional soils from clay to sand in this extreme Alentejo region allow, despite the low productivity, conditions for ripening with great aromatic expression and retention of freshness. Hand-harvested from this plot, transported in small 12 kg boxes to the winery.
In the Cellar:
The bunches selected from the vineyard are destemmed and transported by gravity to a small wine press, where 40% of the wine is bled (this bled is then passed to a fermentation tank) and fermented at a controlled temperature for 18 days. After alcoholic fermentation, malolactic fermentation follows, where monthly battonage continues throughout the Solera period.
Aging:
50 months in Tronçais barrels in Solera (100%);
12 months in stainless steel;
6 months in bottle.
