Harvest made at the peak of phenolic ripeness ocurred in September for Merlot and Syrah and in early October for Touriga Franca and Alicante Bouschet. Mechanical and manual harvest, depending on the grape variety ant their health status. Fermentation in stainless steel vats and small mills with "treading" for better extraction of color and aromas. Short post-fermentation maceration and malolatic fermentation in 2nd use barrels.
