Manual night harvest, sorting table, direct pressing without crushing and cold settling for about 12 hours, without additives. Spontaneous alcoholic and malolactic fermentation. The wine of the year is blended with the “reserve wine,” a 5-year solera. Second fermentation in the bottle with free yeasts. Clean straw yellow color, fine bubbles, intense nose and notes of citrus and toasted bread. Medium-bodied attack, with beautiful acidity, aromas repeated in the retronasal. Long finish, good texture and persistence.
