Manual night harvest. The grapes are then selected on a sorting table, ensuring that only the best fruit enters the vat. The grapes are then transported to the fermentation vat by gravity, without the use of any pumps, allowing for a gentle and long extraction. Fermentation is spontaneous and the total maceration time is between 25 and 40 days. The second malolactic fermentation takes place partly in barrels (30%) and the rest in vats.
